French Silk Pie

For more years than I can count, we have served French Silk Pies along with our Pumpkin Pies for Thanksgiving Dinners. This is a very simple recipe and if you want to make it even easier, purchase a prepared pie shell. If you do, I recommend taking a rolling pin to it to thin it out a bit before baking and brush the edge with egg white to give it a nice golden glow.

Hayes' Family French Silk Pie Recipe

  • 1.5 c Bakers Sugar *Regular sugar will make the pie grainy
  • 1 c Butter - Softened
  • 4 SQ Unsweetened Chocolate
  • 2 tsp Vanilla
  • 4 Eggs
  • *Mint Extract if desired
  • Baked Pie Shell 

Cream butter completely, gradually add sugar, creaming well. Blend in melted, cooled chocolate and vanilla. Add eggs one at a time, beating well after each on medium speed. Blend in mint extract by the drop if desired. Pour into baked, cooled pie shell and chill 2 hours minimum before serving. Pie is quite rich, so I recommend small slices.

*We have been making this recipe for over 40 years and no one has ever gotten sick from the raw eggs.
