French Silk Pie
For more years than I can count, we have served French Silk Pies along with our Pumpkin Pies for Thanksgiving Dinners. This is a very simple recipe and if you want to make it even easier, purchase a prepared pie shell. If you do, I recommend taking a rolling pin to it to thin it out a bit before baking and brush the edge with egg white to give it a nice golden glow.
Hayes' Family French Silk Pie Recipe
Cream butter completely, gradually add sugar, creaming well. Blend in melted, cooled chocolate and vanilla. Add eggs one at a time, beating well after each on medium speed. Blend in mint extract by the drop if desired. Pour into baked, cooled pie shell and chill 2 hours minimum before serving. Pie is quite rich, so I recommend small slices.
